Ingredients

• 1 package Eckrich Smok-y Cheddar Breakfast Sausage Links, chopped
• 5 large eggs
• 1/2 cup milk
• 2 cups shredded Cheddar cheese
• 1/4 cup grated Parmesan cheese
• 1 tablespoon butter
• 1 medium red bell pepper, diced
• 1/3 cup sliced green onions
• Salt and pepper, to taste

Steps

1. Heat oven to 350ºF. Whisk together eggs, milk, Cheddar and Parmesan cheese; season with salt and pepper as desired. Set aside.
2. Melt butter over medium-high heat in a large oven-proof skillet with 2-inch sides. Add sausage and bell pepper; cook and stir until pepper has softened slightly, about 3 minutes.
